      Certain Yeast enjoys cocoa, that mould would have accellerated the aging process 2 fold every day after the first 24 hours. you noted that it looked like how the pinapple was, and you are correct as the yeast penetrated the meat. you also pointed out how similar it is to truffle, an attribute to the yeast/mould as well

    Dude, please stop eating rotten meat, it can't be good for you. BTW sniffing is not a good test for freshness, since you cannot smell most toxins and heat won't deactivate them either. BTW mold won't always result in upset stomach, it can f*** with your neural system and give symptoms much later.

    Okay, just to let you all know. Mold is a normal thing with dry aging steak. That does not mean the meat is rotten, rather the mold has formed a thin crust. All that is done is to simply cut away that layer of mold before cooking the meat.

    I'm sure you've thought about using a propane grill when you do these experiments instead of getting that nice charcoal flavor you instead get the clean taste and flavor of just the meat with a propane grill, to really be able to gauge the flavor of the steak you've cooked.

    Just removing the mold is generally not realy a good idea. The "roots" of it are most likely still in there and they can be unhealthy.

      The “frutification body”, the fancy name for the part we actually see of the mold, can only appear once its hyphae (the “roots” of the fungus) have dominated very single inch possible of the substrate where they’re growing. So yeah, there’s still plenty of “truffle” all over that meat, Guga, don’t worry
